A few weeks ago I was in New York for my Keto book series photo shoot.
One of the book that is coming end of the year is KETO BAKED, that focus on Keto bake goods and dessert. Since then I’ve received requests for a sneak peak of KETO BAKED. 😀
So here it is, this is one of the delicious dessert that my family and friends absolutely loves it, and is easy to make. This yogurt dessert is a French inspired dessert made Keto. It has a fluffy texture, not too sweet, and it melts in the mouth.
It is particularly tasty fresh out of the oven when it is warm and crusty. You can also store it in the refrigerator for several days in an airtight container and serve it at room temperature.

Here is the recipe
- 2 large eggs
- 1 cup (250 ml) whole milk plain Greek yogurt
- 1/3 cup (60 g) monkfruit erythritol (or xylitol)
- 1 teaspoon pure vanilla extract
- 1/3 cup (80 ml) coconut oil
- 1 tablespoon brandy (or Remi Martin)
- ¼ teaspoon salt
- 2 cups (250 g) almond flour
- 1½ teaspoon baking powder
- ½ teaspoon baking soda
- Preheat the oven to 350° F (180° C). Line the bottom of a round 7 inch cake pan with parchment paper.
- In a mixing bowl, add the eggs, yogurt, xylitol, vanilla, oil, and Brandy. Mix them together.
- Add the almond flour, baking powder, baking soda, and salt, and mix them together gently until no more flour lump, but don’t overwork the batter.
- Pour the batter into the prepared cake pan, and bake for 30-35 minutes, until the top is golden brown and a toothpick pierce into the center comes out clean. Check the cake at 25 minutes and if the top is browning, cover with a foil loosely to prevent over browning.
- Remove from the oven and let it cool for 15 minutes before cutting into slices. This cake can be chilled in the refrigerator a day ahead and let it sit on the counter to room temperature before serving.

I only have coconut sugar,maple syrup. Any idea on the amount i should add?
Hi Deb, for your info, coconut sugar and maple syrup is not keto compliant which means it could spike blood glucose.
I don’t use those sweetener, I can’t advice the amount to use. Sorry.
I made this into 12 cupcakes today and they are absolutely delicious. I made a keto cream cheese frosting to go on top and I am so happy with how well they turned out!

Made the cake. It was easy and everyone loved it. It was light and delicious.

FYI 1/3 cup of monkfruit/erythritol doesn’t weight 160gm—it weighs 64 gm—on the package 1 tsp weighs 4gm and there are 16 tsp in 1/3 cup.
I also measured less accurately in a 1/3 cup measure and then weighed it and it was 69 gm—if you find this dessert too sweet, that would be the reason.

How many calories is in each slice of cake?
Hi Sara, Each serving contains 6 g total carb, 5.7 g protein and 18 g fat. Carb and Protein multiply by 4, Fat multiply by 9. That will be total of 208.8 cal. For Keto eating, we pay attention to carb grams, just enough protein gram and appropriate amount of good fat. Calories are not the first thing to keep track of.
Can’t wait to make this. I wonder if I can put lemon juice and a bit of lemon zest in instead of Brandy, also not sure if it would need the vanilla if I do? Thank you for sharing this recipe as I do have an an cooked a Yoghurt pie that I love but not really Keto as carbs too high. I am going through all my favorite recipes and trying to change them but I am sensitive to artificial sweeteners so need other thing to make sweet enough. I am even thinking of blending up a small amount of Blueberries to cut the Xylitol in this recipe. Thanks again, love your recipes. 👍😋
I’m sure it will taste good with lemon juice and lemon zest. 🙂 You can try it with and without the vanilla the second time to see which one you like it more. Blend blueberry sounds good to me, if you don’t mind a blue color cake. 😀

Can I use a loaf pan? Also can I sub something for Brandy?
Sure you can use a loaf pan. You might have to watch the baking time though, just check the cake with the wooden skewer by inserting into the middle of the cake, when it comes out clean it is done. I have not tried using other liquor in place of Brandy, I’m sure you can try it out.

Kelly…I don’t do dairy….can o sub almond or coc yogurt in this (and other dishes calling for yogurt)….maybe need to reduce the liquid I the recipe since it is not as thick as Greek yogurt??
I guess you can use other non dairy yogurt. It they are thinner and more liquid, may be use lesser yogurt and balance it by adding a tablespoon of coconut flour to absorb the moisture. Test it out. 🙂
