We have been enjoying our turkey leftovers the last two days.
And we don’t like the lean white meat very much. So I use it to make a Shepherd’s pie with butter and cream. Top with mashed cauliflower and broil it.
This Shepherd’s pie is tasty! It can be prepare with chicken and it will be equally good.
The preparation time for the filling is about 15 minutes. And only 10 minutes for broiler to brown the top.
This recipe serves 6 portions.

You will need this ingredients.
4-5 cups turkey meat, chopped
¼ cup red onion, chopped
½ cup tomato, diced
1 tablespoon butter
½ cup heavy cream
1 teaspoon Worcestershire sauce
1 teaspoon rosemary
1 teaspoon thyme
¼ teaspoon freshly ground black pepper
1 tablespoon Gumbo File powder (sassafras powder) or just use beef gelatin powder
1 tablespoon beef gelatin powder
Pinch of paprika
Pinch of parsley
First, left’s chop up some onion, tomato and the leftover turkey meat!
Melt butter in a pan. Sauté turkey meat, onion and tomato for about 2 minutes.
Mix in thyme, rosemary and Worcestershire sauce. Add heavy cream and stir to mix. Let it simmer for 1 minute. Stir in the Gumbo File powder to thicken the consistency.
Let it simmer till it gets thicker, but it is not starchy. The longer you simmer it get thicker.
I like using this Gumbo File powder which is pure ground sassafras leaves. It is used to thicken gumbo and stews for the southern cuisine.
Alternatively, if you are not using Gumbo File powder, use two tablespoons of beef gelatin powder, or melt in a couple tablespoons of cream cheese.
Pour turkey mixture into a baking dish. Top with mashed cauliflower starting from the center towards the edge. around the edges and smooth with a rubber spatula. Garnish with paprika and parsley.
Broil in the oven for 10 minutes, or until the top of the cauliflower lightly browned.
Remove from the oven and let it sit for 10 minutes before serving.
