Mango balsamic pork chop

Ingredients
  • 2 pieces (1 inch thick cut) bone-in pork chop
  • 2 tablespoons avocado oil
  • Pinch of salt
  • Pinch of ground black pepper
  • 1 teaspoon thyme
  • Ingredients for mango sauce:
  • 1 ripped whole fresh mango
  • 1 cup Chicken stock
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon thyme
  • 1 tablespoon butter
  • Pinch of pepper and salt to taste
Instructions
  1. Rub pork chop with salt, pepper and thyme. Heat oven to 300F.
  2. Heat pan and add avocado oil. Pan sear the pork chops in medium high heat for 1 minute to brown. Turn pork chops over to brown the other side for another 1 minute. Remove the pork chops from pan and place in baking dish. Bake in over for 15 minutes uncover.
  3. To prepare sauce: remove the mango skin and dice mango. Separate the nicer dices of mango into one cup for garnish. Place the rest of the diced mango and the less nice mango dices into another cup to use for mashing into sauce.
  4. Using the same browning pan for pork chop. Add 1 cup chicken stock and simmer for 2 minutes in low heat. Slowly de-glaze by gently scraping to dissolve the browned pork bits in the pan.
  5. Add the cup of the less nice diced mango and let it simmer in low heat for 5 minutes until mango is soft. Gently mash mango dices with a fork in pan while simmering.
  6. Add balsamic vinegar, thyme and melt butter into the sauce with very low heat. Add pinch of pepper. Taste before adding salt, if necessary. Set aside and keep warm.
  7. When pork chop is ready, drizzle mango balsamic sauce onto pork chop, and top with the remainder fresh dices mango. Serve warm.
