Ah! If you love pizza, this will be the low carb high fat Fat Head cheese crust pizza you will like more than those traditional pizza dough.
This pizza dough is made mainly with cheese, and more cheese. Watch the video below to see how I make this pizza crust fresh from my kitchen!
The preparation time is 8 minutes, bake time is about 13 minutes and it serves 8 slices.
This is what you will need.
The Crust:
1 1/2 cups shredded mozzarella
2 tablespoons cream cheese
¾ cup almond flour
1 egg
Garlic salt
Parchment paper and cookie sheet
Instructions:
- Place mozzarella and cream cheese in a medium size microwaveable bowl. Microwave for 1 min, stir and then another 30 sec, stir (very hot!)
- Mix in the egg and almond flour. Use a spatula, fold and mix until well mixed. Place the dough in the center of a pizza pan. With wet hands, spread dough thin on parchment paper. It should spread evenly with dough-like consistency (if stringy then your cheese has hardened too muchjust put it back in the microwave for maybe another 20 seconds)
- Us a fork, poke holes around the dough. This will avoid bubbling. Sprinkle with garlic salt
- Bake crust in a pre-heated 425 degree F oven. After about 8 minutes, check it and poke holes where any large bubbles may be. Continue to bake for another 4-5 minutes, or until slightly brown on top.
Each slice contains 3.4 g total carb, 2.3g net carb, 12g protein and 16.7g fat.

I have not tried using other method to melt the cheese… I’m guessing using the heat over the stove might do the work.

Oh my Kelly, this looks great! Avocado added was a great idea! I use various toppings and cook them first then add them and broil just to reheat. I have found it very easy to over cook this crust! Yours is perfect!
Hi Sandy, it depends on your oven. I learned that for my oven I have to check it at 8 minutes, poke more holes with a fork if necessary, and than stay with it as it bake for another 3-5 minutes until I see the golden brown color I want. 🙂
