If you have a waffle iron, don’t need to put it away because you don’t eat the regular waffle anymore. I got a waffle iron couple years ago, and made the low carb waffle only twice. I thought it should be used more often. So I decided to try it with eggs.

These are all the ingredients I used; 4 eggs beaten in a bowl, 1/4 cup of chopped tomato, 1 tablespoon of chopped onion, and 2 tablespoons coconut flour. Mix the ingredients into the egg. You can also mix any kind of chopped ingredient into the egg.

Heat up the waffle iron and brush some butter onto the hot iron.

And than pour half of the mixture onto the centre of the hot iron. Use a spatula to spread the tomato and onion evenly. Cover the top lid of the iron and let it cook in medium high heat for a few minutes.

The eggy waffle should be cook in about 3-4 minutes. When is lightly browned, is cooked.

Use a spatular, carefully remove the eggy waffle from the iron onto a plate. Add a dollop of sour cream and garnish with berries. Serve immediately.

I enjoy eating my eggy waffle with more butter on it. 🙂

Ingredients
  • 4 eggs, beaten
  • 1/4 cup tomato, diced
  • 1 tablespoon onion, finely chopped
  • 2 tablespoons coconut flour
  • 2 teaspoons butter
  • 2 tablespoons sour cream
  • 2 blackberries and 8 raspberries, for garnish
Instructions
  1. Mix the tomato, onion and coconut flour into the beaten egg.
  2. Heat up the waffle iron and brush 1 teaspoon butter onto the hot iron.
  3. Pour half of the mixture onto the centre of the hot iron. Use a spatula to spread the tomato and onion evenly. Cover the top lid of the iron and let it cook in medium high heat for a three minutes.
  4. The eggy waffle should be cook in about 3-4 minutes. When is lightly browned, is cooked.
  5. Use a spatular, carefully remove the eggy waffle from the iron onto a plate. Continue to make the second portion.
  6. Add a dollop of sour cream of each waffle, and garnish with berries. Serve immediately.

Each serving including the berries contains 8 g total carb, 4.6 g net carb, 14.4 g protein and 15 g fat.

Each serving without the berries contains 6.4 g total carb, 3.6 g net carb, 14.4 g protein and 15 g fat.
