Mix the tomato, onion and coconut flour into the beaten egg.
Heat up the waffle iron and brush 1 teaspoon butter onto the hot iron.
Pour half of the mixture onto the centre of the hot iron. Use a spatula to spread the tomato and onion evenly. Cover the top lid of the iron and let it cook in medium high heat for a three minutes.
The eggy waffle should be cook in about 3-4 minutes. When is lightly browned, is cooked.
Use a spatular, carefully remove the eggy waffle from the iron onto a plate. Continue to make the second portion.
Add a dollop of sour cream of each waffle, and garnish with berries. Serve immediately.
